Purpose of Role
The role is reporting to Senior Food & Beverage Manager, responsible for implementing new Food & Beverage items through collaborations with supply chain team and kitchen team. This role involves menu analysis, stock forecasts, and conducting regular restaurant visits to ensure food quality and consistency meet company standards.
Responsibilities Includes
- Assist Senior F&B Manager to implement menu (including ALC menu and seasonal menus) that align with brand standards.
- Supporting all menus launch (e.g. POS system updates, HTCs development, ingredients coordination, liaison between office and restaurants for a smooth launch)
- Develop and optimize dine-in and take-out set menus to maximise sales.
- Analyze menu performance metrics such as sales data, operation feedback, and food costs. Provide insights to recommend menu adjustments and improvements.
- Prepare stock forecasts based on historical data and market trends prior to menu launch, as well as monitoring menu movement vs stock forecast to make adjustment when needed.
- Partner closely with supply chain on food ingredient arrangement and quality matters.
- Conduct regular visits to restaurants to assess food quality, presentation, and adherence to standards. Collaborate with BOH team to implement quality improvement initiatives.
- Work with cross-functional teams on menu engineering and to ensure cohesive execution of menu strategies.
- Librarian to the central food recipes library for international partners
- Participating in other ad hoc duties as assigned.
Requirements
- Higher diploma or above preferably in Hospitality or related disciplines;
- Minimum 2 year's experience in food quality control, menu implementation. Candidate with kitchen operational excellence or product development experience will be preferred.
- Strong analytical skills with the ability to interpret data and make data-driven decisions.
- Experience in menu engineering for food cost and margin is preferred
- A strong team player & adapting person with good interpersonal and communication skills, great proactiveness and able to work independently at the same time
- Good command of both written and spoken English and Cantonese;
- Analytical and detail minded.
- Candidate with more experience would be considered as Senior Executive
