Job Responsibilities

  • Assist the Executive Chef in planning and executing menus that highlight traditional and modern Spanish cuisine.
  • Oversee daily kitchen operations, ensuring efficiency, cleanliness, and compliance with health and safety standards.
  • Prepare and cook a wide range of Spanish dishes, including tapas, paellas, seafood, and regional specialties.
  • Train, mentor, and supervise kitchen staff to maintain high standards of food preparation and presentation.
  • Collaborate on menu development, incorporating seasonal ingredients and innovative ideas while staying true to Spanish culinary traditions.
  • Monitor inventory levels, order supplies, and manage food costs effectively.
  • Ensure consistency in taste, quality, and presentation across all dishes served.
  • Assist in managing kitchen schedules, staff performance, and conflict resolution.
  • Maintain a positive and professional work environment that fosters teamwork and creativity.

Job Requirements

  • Proven experience as a Sous Chef or similar role, specializing in Spanish cuisine is advantage.
  • In-depth knowledge of Spanish cooking techniques, ingredients, and regional flavors.
  • Culinary degree or equivalent training is preferred.
  • Strong leadership skills with the ability to motivate and manage a diverse team.
  • Excellent organizational and time-management skills.
  • Ability to work under pressure in a fast-paced environment while maintaining attention to detail.
  • Familiarity with inventory management and food cost control.
  • Passion for culinary arts and a commitment to continuous learning and improvement.

We are looking for an Indian Chef based at Island Shangri-La, Hong Kong!

As An Indian Chef, We Rely On You To

  • Prepare the daily requisition for all required food items of the restaurant
  • Ensure that all food products are served in accordance with established policies, guidelines and recipes
  • Assist Senior Chefs in working out recipes and food related promotions
  • Ensure that the cost control policies and procedures are followed
  • Ensure the cleanliness of utensils and work areas, kitchen equipment are being handling and maintained properly

We Are Looking For Someone Who Has

  • Minimum 4 years of relevant experience in prestigious Hotels or restaurants with 2 years of experience in a similar position
  • Expertise in a particular Indian and South East Asian Cuisine would be an advantage
  • Good knowledge of authentic Indian food and food trend in the market
  • Understanding in the operation of relevant section, including daily operation, cost control and procurement system, HACCP, Work Safety and employee related matters
  • Excellent communications and interpersonal skills
  • Good command of both spoken and written English

Job Overview

Oversees and supervises the I-O-N kitchen operation in the restaurant, in charge of generating and creating any menus, dishes, promotions and special events, general quality control and any activities related to the restaurant.

Responsibilities

  • Sets up and organize the purchasing specifications with the Procurement Department. Assists in sourcing new products and the selection of the best products for the best values;
  • Coordinates and organizes the various testing for new and existing products in order to keep and increase the quality standards wherever possible;
  • Assists in consulting together with the Procurement department and suppliers in order to keep optimum awareness on availability of products, their seasonality and provenance etc;
  • Establishes the quality standard required for each product and in restaurant;
  • Ensures that a proper quality control system is in place at the receiving dock. Follows up on the proper arrivals of all products ordered on the various market list and ensure that any shortfall in delivery is immediately reordered or rescheduled for delivery;
  • Controls the proper turnover of the food in the storeroom on all products and especially perishables. Coaches and assists the Storeroom keeper to achieve the best possible condition in keeping adequate storage of the food, by helping to determine par stock according to business level;
  • Keeps abreast with the assistance of the Procurement of the various market trends, local international, past, present and future in order to remain on the competitive edge and to develop menus and dishes on demand in the market.
  • Develops proper recipes and costs for all menus before pricing, to ensure optimum control on portion size and quality. Proposing and deciding the adequate pricing of each food item in accordance with right cost standard, market trend when appropriate.
  • Control at all time on a daily basis: the proper follow up of all established recipes; the good quality of the raw ingredients; the proper level of production in accordance with the business at hand; the respect of the preordained portion size, cost and presentation of all dishes.
  • Analyzes the guest comments and reactions to the product in general in cooperation with the Assistant/F&B Manager and the restaurant managers, in order to keep up with the changing demand of the market;
  • Develops in cooperation of the Assistant/F&B Manager all new menu carte recipes and dishes, new concepts, special activities, and food promotions and any other events pertaining to the F&B operation;
  • Always ensures that proper communication and positive work relation to facilitate the smooth running of the operation, by coaching and consulting with everyone involved.
  • Esure in general a proper communication between Kitchen and Service team to optimize the overall performance of the F&B department;
  • Supervises the operation in restaurant and banqueting area, to ensure smooth running, and adequate standard of quality;

Responsibilities (Con't)

  • Check on all guest comments and discuss any corrective measures to be taken in each case, in order to maintain and improve the standard;
  • Makes regular rounds of the various kitchens to check regularly on the cleanliness.
  • Checks on the food requisitions from all kitchens to ensure that adequate food will be prepared for the level of business on hand that wastage and overproduction will be kept to a minimum.
  • Conduct spot check on the quality of the products as often as possible to ensure proper standards are kept.
  • Keeps a proper image by relating and getting feedback from guests, colleagues and superiors in order to keep abreast with the demands of a changing market.
  • Measures regularly the performance standards of all team members through performance evaluation systems;
  • Anticipates in forecasting the manning level needed with the Assistant/F&B Manager in accordance to the business to make sure that the restaurant is adequately manned;
  • Recommends any promotions; transfer, cross exposure or salary increases needed;
  • Always coaches the team on positive attitude to changing attitude in customer perception or expectation.
  • Prepares and carries out any administrative duties pertaining to members planning and scheduling, payroll control in general, and recruiting;
  • Ensures that all members are properly groomed for their position and adequately trained; Ensures proper discipline and accepted code of behaviour as determined by hotel standards;
  • Creates a climate of good teamwork and high level of motivation throughout the department to facilitate good working relation and efficiency through proper leadership skills, human relations and general management skills.
  • Makes sure that all the kitchen equipment is in good working condition, and with the assistance of the chief engineer, dispense training needed to lower the incidence of undue breakage or cost related to undue repairs;
  • Follows up on any cleaning and sanitation procedures including various pest control procedures, with the executive housekeeper to ensure that all standards are met in this area.
  • Any other relevant projects and duties as assigned by superior.

Requirements

  • 15 to 20 years relevant experience.
  • Strong marketing mind sociable and outgoing personality creative, flexible in all aspects.
  • Well organized and a good planner.
  • Good interpersonal skills and leadership skill.
  • Good team player and able to develop sound working relationships with colleagues.
  • Good command of spoken and written English and Mandarin.

The Pastry Sous Chef at Kimpton Tsim Sha Tsui Hong Kong is responsible for assisting in the creation and execution of innovative and visually appealing desserts, while managing and developing the pastry team. This role involves maintaining high standards of pastry preparation and presentation, and fostering a positive and productive work environment.

A little taste of your day-to-day

Every Day Is Different, But You’ll Mostly Be

  • Assisting in the creation and execution of innovative and visually appealing desserts
  • Managing and training pastry kitchen staff to ensure high standards of pastry preparation and presentation
  • Collaborating with the team to maintain a positive and productive work environment
  • Sourcing ingredients and ensuring food safety and hygiene standards are met
  • Continuously learning and taking on new challenges to improve every day
  • Supporting and motivating the team, fostering a culture of accountability and reliability.

What We Need From You

  • A minimum of 5 years of experience in a high-end pastry environment, with at least 2 years of management experience
  • Formal culinary training from a recognized institution, specializing in pastry arts
  • Strong background in creating both traditional and modern pastry and dessert items
  • Proficiency in a variety of pastry techniques, including baking, decorating, and chocolate work
  • Strong organizational skills, attention to detail, and the ability to maintain high standards under pressure
  • Passion for pastry arts, creativity, and innovation in dessert design and presentation
  • Flexibility to work evenings, weekends, and holidays as required
  • Knowledgeable in Microsoft Office
  • Good command in both English and Chinese, speaking and writing.

Position Summary

Supervise and coordinate activities of cooks and workers. Determine how food should be presented and create decorative food displays. Ensure proper portion, arrangement, and food garnish to be served. Monitor the quantity of food that is prepared. Inform Food & Beverage service staff of menu specials and out of stock menu items. Prepare special meals or substitute items. Assist cooks and kitchen staff with various tasks. Provide cooks with needed items. Monitor stock of kitchen supplies and food. Maintain kitchen logs for food safety program and food products. Ensure the quality of the food items and notify manager if a product does not meet specifications.

Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, and motivating and coaching employees. Follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to manager; complete safety training and certifications. Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets. Address guests’ service needs. Speak with others using clear and professional language. Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to the concerns of other employees. Ensure adherence to quality expectations and standards. Stand, sit, or walk for an extended period of time. Reach overhead and below the knees, including bending, twisting, pulling, and stooping. Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance. Perform other reasonable job duties as requested by Supervisors.

Preferred Qualification

Education: Technical, Trade, or Vocational School Degree.

Related Work Experience: 4 to 6 years of related work experience.

Supervisory Experience: At least 2 years of supervisory experience.
